2008 Chardonnay

This wine is redolent with the aromas of peach, stone-fruit and melon, complemented by delicate citrus flavours and smoky oak characters. Vibrant and lively on the palate, it is medium in weight and possesses a crisp, citrus forward, lingering finish.

2008 Chardonnay

By staging the picking from 12-14.5° baumé we are able to achieve a broad spectrum of flavours. The fruit is harvested through the cold of night, and promptly transported to the winery where it is crushed and pressed as gently as possible. The juice is then fermented at cool temperatures to retain fruit aromas. Post ferment, the wine is aged on French oak with a portion held clean, another portion subjected to lees stirring, and a final portion undergoing the secondary malo-lactic fermentation. The wine is then blended, minimally filtered and bottled.
